Prepared just like their Granddaddy Tom did for his family in a country farmhouse, Mayhaw jelly is truly a Southern delicacy because of the rarity of the fruit. Found in the bogs and swamps of Southwest Georgia, the little red berries, like apples, belong to the Haw family, they are hand-harvested using nets and hand-squeezed to extract the clear, coral-colored juice that makes jelly fit for a king.
